Trader Joe’s {Slow Cooker} Barbecue Chicken with Honey Golden Potatoes and Mixed Veggies


This easy and delicious meal is perfect for dinner when we’ve had a busy afternoon out. I can get everything prepared before we leave the house and then return home to a nearly finished meal!

You will need

1lb chicken tenderloins (or breasts, just be sure to cut them into thinner pieces)

½ cup Trader Joe’s barbeque sauce

honey golden potatoes

frozen mixed vegetables (corn, green beans, peas and carrots)

butter, salt and pepper

To make the barbeque chicken, first spray the slow cooker with some non-stick spray. (I’m not even sure that this step is necessary but I read it once and have always done it, lol) Add the chicken and pour barbeque sauce over it. No need to stir. Set to low and cook for four hours. Once it’s done, shred with a fork.


About forty-five minutes before the chicken is done, I start cooking the potatoes. First, wash and scrub them. Cut them into halves (or quarters). Fill a large pot with water, add the potatoes and heat to boiling. Reduce heat slightly and cook until they are tender (about 30 minutes). Drain in colander and return to pot. Add a little butter and season with salt and pepper.

The vegetables are just made according to the package. Once the water’s boiling, I let them simmer for about eight minutes.

And that’s it.
