Weekly Meal Plan {Jan 11-17}

weekly-meal-planBecause I’ve been feeling frustrated by my lack of meal time organization lately, I have decided to begin making and posting a weekly meal plan. I’m hoping, at least for now, to do this every Tuesday because my shopping day is Wednesday, though it may change slightly based on the week. My goals are to 1) try lots of new recipes 2) use as many on-hand ingredients as I can 3) make delicious dinners for my family. ^_^


Classic chili and cornbread

ingredients I already have – kidney and pinto beans, corn, onion (share with Thursday and Friday’s meals), seasonings, tomato sauce

what I need to buy – green pepper (share with Friday’s meal), ground turkey, cornbread, petite diced tomatoes

prep work – brown meat in morning, dice onion and green pepper in morning, make cornbread in early afternoon


Slow Cooker Honey Buffalo Meatballs (new) and macaroni & cheese

ingredients I already have – ground turkey, club crackers, buffalo sauce, eggs, seasonings, onion (share with Wednesday and Friday’s meals), brown sugar, mac & cheese, milk, butter, honey

what I need to buy – soy sauce, apricot preserves

prep work – get ground turkey out of freezer the night before, dice onion in the morning


Cheesy Enchilada Rice Skillet (new)

ingredients I already have – rice, black beans, seasoning, enchilada sauce, frozen corn, onion (share with Wednesday and Thursday’s meals), shredded cheese

what I need to buy – green pepper (share with Wednesday’s meal), cilantro

prep work – dice onion in the morning


Slow Cooker Pot Roast (new) and rolls

ingredients I already have – onion soup mix

what I need to buy – chuck roast, carrots, onion, potatoes, rolls

prep work – chop veggies the night before or in the morning


eat out!


Veggie subs, onion rings & dipping sauce

ingredients I already have – mushrooms, horseradish, mayonnaise, ketchup, seasonings

what I need to buy – onion, green pepper, sub bread, onion rings

prep work – slice vegetables in morning


Quesadillas, tortilla chips and homemade salsa (new)

ingredients I already have – refried beans, shredded cheese, corn, flour tortillas

what I need to buy – jalapeños, canned tomatoes, black beans, tortilla chips

prep work – none

      1. I have a hypothetical love for lettuce wraps. Anytime I have zero lettuce in the house, I crave them. When I buy lettuce and make lettuce wraps, I remember I don’t like them. Hahaha. I’ll be watching for your opinion on the Mexican dish. :)

  1. Such a great idea! I make a menu for every 2 weeks (or so), because the grocery store is kind of far away and it ends up being a whole day event! I really like your idea of listing it down to the ingredients you have, what you need, and what needs prep. You go, girl!

  2. I menu plan every Friday for the weekend and week ahead. It makes it easier to actually get things ready to eat on time so I don’t think ‘sod it’ and order take away. I would love to try corn bread-never had it before!

    1. Lol, I absolutely know what you mean! Although I am too cheap to pick dinner up, I’m known for basically letting the kids just pick something (within reason) to have in place me cooking!! :P

  3. For this next week we’ve got leftover lasagne from a lunch party we had today as well as some leftover potato and Stilton soup Mr O made over the weekend. I’m also planning to make sausage, mash and peas, sausage and lentil casserole and a quiche made with enchilada wraps rather than a crust. Mr O says he’s going to make ham and pea soup. He’s obsessed with soup at the moment!
