Weekly Meal Plan {Jan 18-24}


Last week went really well; there were a few changes made in regards to which meal went with which night but otherwise I stuck to the meal plan. ^_^

As a reminder, my goals are to 1) try lots of new recipes 2) use as many on-hand ingredients as I can 3) make delicious dinners for my family.

Here’s this week’s meal plan:


Slow Cooker Chicken Fajitas and leftover Mac & Cheese

ingredients I already have – seasonings, mac & cheese, flour tortillas

what I need to buy – chicken tenderloins, green pepper, onion

prep work – slice onion and green pepper in morning


Chinese Chicken Salad (new)

ingredients I already have – soy sauce, mandarin oranges, romaine lettuce, carrots, sliced almonds

what I need to buy – breaded chicken, red cabbage, green onion, chow mein noodles, rice wine vinegar, sesame oil, edamame

prep work – none


Soft Tacos, corn, tortilla chips and homemade salsa

ingredients I already have – seasonings, homemade salsa

what I need to buy – ground turkey, flour tortillas, corn

prep work – make taco meat mid-morning


One Skillet Cheesy Chili Mac (new), green beans, biscuits

ingredients I already have – elbow macaroni, seasonings, brown sugar, shredded cheese, tomato sauce, frozen green beans, biscuits

what I need to buy – ground turkey (3lbs, to share with Monday’s meal and freeze 1lb), onion (share with Monday’s meal)

prep work – dice onion in morning (including Monday’s amount)


eat out!


Slow Cooker Sweet and Savory Meatball Subs, mashed potatoes & gravy

ingredients I already have – chili sauce, jam, bread (or crackers?), ketchup, egg, potatoes, gravy packet, chicken broth

what I need to buy – onion (share with Saturday’s meal), ground turkey (3lbs to share with Saturday’s meal and freeze 1lb), hoagie bread

prep work – wash and peel potatoes in morning


Grilled Cheese sandwiches and Cream of Broccoli soup

ingredients I already have – soup, cheese, crackers, milk

what I need to buy – bread

prep work – none

  1. I planned meals for the week but I still have to figure out what I have and what I need to make them. Your posts are giving me a kick in the pants about getting back to better meal planning. Thank you for that!

    1. This way of planning is helping me so much! From making a more thorough grocery list (and not forgetting anything) to using more of what we already have, I am feeling super organized! Wish I’d started long ago!! Yay, I’m glad to know it’s motivating you. ^_^

      1. You should feel super organized! You ARE! And meal planning not only saves money (not buying stuff you already have, etc) but I found it relieves stress. I know what we’re having and that I have everything I need to make the dishes.
        The kids used to laugh at me about my meal planning but I’ve fallen off the last couple of months. Time to get back in the saddle.

I know I should do weekly meal plans because when I don’t I always end up either eating out or ordering out or just making eggs because what I have in the freezer is just too frozen to be ready in time for supper (that reminds me, I really should get some meat out for tomorrow). When I work full-time, it’s a necessity, but now that I’m on mat leave, I’ve stopped doing it. You just gave me the kick in the butt to start again for next week.

  3. Cool meals! We have pretty simple food because my husband is quite picky. We do a veggie, then a meat, then a starch. On our plan is hamburgers/fennel salad/Israeli couscous, french toast/bacon/broccoli, grilled chicken breasts/green beans/rice, grilled turkey tenderloin/corn/pasta, etc. We usually do 4-5 days of meals including meats, then do one day of either macaroni and cheese, homemade pizza, pancakes, or french toast. I used to cook more dish-type meals, but my husband doesn’t like sauces or soft veggies or things mixed together. Sigh.

    I really applaud your meal planning! I do it as well – a stress reliever is right!!!
