Weekly Meal Plan {Feb 1-7}

This past week was our biggest success so far, I think, with some really amazing dinners that all of us enjoyed. Our new stove was delivered today (!) so I wasn’t able to go grocery shopping on my usual day. Instead, I will be going tomorrow.

Here’s this week’s meal plan:

As a reminder, my goals are to 1) try lots of new recipes 2) use as many on-hand ingredients as I can 3) make delicious dinners for my family. ^_^

Wednesday

Mexican Pizzas (new) and tortilla chips with homemade salsa (new)

ingredients I already have – everything – this was a meal we were supposed to have last week

what I need to buy – nothing

prep work – make salsa in morning (done!)

Thursday

Slow Cooker General Tso’s Chicken (new) and rice

ingredients I already have – chicken tenderloin, onion, rice wine vinegar, sesame oil, green onions, rice

what I need to buy – hoisin sauce

prep work – none

Friday

Chicken Quesadillas and cornbread

ingredients I already have – chicken, cheese, onion, salsa

what I need to buy – green pepper, corn bread

prep work – chop green pepper and onion in morning

Saturday

Better than Helper Cheeseburger Macaroni (new) and rolls

ingredients I already have – elbow macaroni, seasonings, shredded cheese, peas, milk

what I need to buy – ground turkey (3lbs – share with Monday and Tuesday’s meal), ricotta cheese, rolls

prep work – none

Sunday

Monday

Slow Cooker Honey Buffalo Meatballs, mac & cheese

ingredients I already have – apricot preserves, honey, brown sugar, soy sauce

what I need to buy – ground turkey (3lbs, share with Saturday and Tuesday’s meals), hot sauce, mac and cheese

prep work – none

Tuesday

Mexican Tator Tot Casserole and corn

ingredients I already have – seasonings, corn, tator tots, onion, olives

what I need to buy – ground turkey (3lbs, share with Saturday and Monday’s meals), enchilada sauce, green chiles

prep work – none
