Weekly Meal Plan {March 17-21}


I’m late with my meal plan this time because I haven’t gone grocery shopping (or anywhere) this week. Stephen stopped at the store after work the other day and grabbed some stuff to carry us through until I go shopping again. I’m going early tomorrow morning after I drop him off, but then we are switching our shopping day from Thursday to Tuesday, so this meal plan only goes through Tuesday. :)

Here’s this week’s meal plan:

As a reminder, my goals are to 1) try lots of new recipes 2) use as many on-hand ingredients as I can 3) make delicious dinners for my family. ^_^


Smothered (Slow Cooked and Baked) Chicken Burritos, corn

ingredients I already have – tortillas, chicken, corn, cheese, onion, seasonings

what I need to buy – nothing

prep work – start slow cooker at 2:30


Veggie subs, seasoned potatoes

ingredients I already have – green pepper, onion, mushrooms, seasonings, potatoes

what I need to buy – sub bread

prep work – none


eat out!


Mexican Rice Casserole, cornbread

ingredients I already have – rice, taco seasoning, tomatoes, sour cream, shredded cheese

what I need to buy – ground turkey, cornbread

prep work – assemble in morning


Slow Cooker Chicken Fajitas (new) and refried beans

ingredients I already have – seasonings, tortillas

what I need to buy – Thyme, chicken, onion, green pepper, beans

prep work – none
