Weekly Meal Plan {April 5-11}

I skipped posting a meal plan last week because my thoughts were pre-occupied with my health, but I’m fine now (!) and I’m going shopping later this afternoon. :)

Here’s this week’s meal plan:

Wednesday

Barbeque Chicken Bake, mac & cheese, cornbread 

ingredients I have chicken, barbeque sauce, onion, mac & cheese, cornbread

what I need to buy shredded cheese

prep work make cornbread in morning

Thursday

Mexican Rice Casserole and corn

ingredients I have rice, taco seasoning, corn, ground turkey

what I need to buy diced tomatoes, onion

prep work assemble in morning, refrigerate until ready to bake

Friday

Better than Helper Cheeseburger Macaroni and biscuits

ingredients I have seasonings, elbow macaroni, peas,

what I need to buy ground turkey, ricotta cheese, milk, shredded cheese (share with Wed’s meal), biscuits

prep work none

Saturday

Slow Cooker French Dip Sandwiches, chips

ingredients I have beef broth, seasonings

what I need to buy sirloin steak, onion, hoagie rolls

prep work start slow cooker by noon

Sunday

eat out!

Monday

Slow Cooker Cowboy Stew and biscuits

ingredients I have carrots, potatoes, seasonings, tomato sauce

what I need to buy biscuits (share with Friday’s meals), ground turkey

prep work cook meat in morning, start slow cooker by noon

Tuesday

Hot dogs, bakes beans and fries

ingredients I have hot dogs, condiments

what I need to buy buns, fries, beans

prep work none

  1. That cowboy stew sounds delicious!! I don’t know where I”d be without my meal plan… Even when I’m forced to move things around as the week changes, I know if I didn’t do it I’d be making things like chicken nuggets or frozen pizza in a pinch instead of borrowing from tomorrow’s dinner, for example. It’s sooo taken the stress out of dinnertime!

      I totally agree! And a home cooked meal is so much better than nuggets, lol but I know exactly what you mean because I do the same thing when I don’t have a plan. :P

  2. I do meal plan, or at least try to! I am trying to do lots of fresh vegetable cooking this week and skip as many carbs as possible since we just went on vacation and ate out like crazy! This week we are doing:
    Monday – Meatless Monday w/Coconut Curry beans over rice
    Tuesday – Shrimp Avocado Ceviche
    Wednesday – Ratatouille (also vegetarian)
    Thursday – One Pan Oven Roasted Lemon Chicken and Asparagus
    Friday – Homemade Egg Pasta w/an Italian Sausage Red Wine Sauce (we are having guests over so carbs don’t count ;)
